A family story

More than 300 years old, our domain has been owned by same family from 1714. It is currently managed by François Paret and his daughter Jérômine.


Vines growing and winemaking

Area

30 hectares on slope, towering the sea, facing Cassis Bay.


Geology

Clay and Limestone heavy ground. Very rich limestone layer.


Climate

Méditerranean, with smooth temperatures all year long. Few rain, but sea mist keeping a nice hygrometry well suiting vines.


Designation

AOC Cassis since 1936, the day the AOC system was implemented


Production

Yearly average of 150 000 bottles, of which 80% are whites, 15% rosé and 5% red.


Yield

Restricted by law at 45 hectolitres  per hectare, however our real yield os closer to 35.


Harvest

Done manually, transportation by small boxes. Careful sorting of the grape. Fermentation and raising at controlled temperature.
